Course Description (NCTC Catalog):

This course introduces general nutritional concepts in health and disease and includes practical applications of that knowledge. Special emphasis is given to nutrients and nutritional processes including functions, food sources, digestion, absorption, and metabolism. Food safety, availability, and nutritional information including food labels, advertising, and nationally established guidelines are addressed.

At the successful completion of this course the student will be able to:

1.    Apply nutritional knowledge to analyze personal dietary intakes, to plan nutritious meals using nationally established criteria to meet recommended goals, and to evaluate food labels and the validity of nutritional claims.

2.    Trace the pathways and processes that occur in the body to handle nutrients and alcohol through consumption, digestion, absorption, transport, metabolism, storage and waste excretion.

3.    Discuss functions, sources, deficiencies, and toxicities of macro- and micronutrients, including carbohydrates, lipids, proteins, water, vitamins, and minerals.

4.    Apply the concept of energy balance and its influences at the physical, emotional, societal, and cellular level to evaluate advantages and disadvantages of various methods used to correct energy imbalances.

5.    Utilize concepts of aerobic and anaerobic energy systems, and knowledge about macronutrients, vitamins, minerals, ergogenics, and supplements and relate them to fitness and health.

6.    Describe health and disease issues related to nutrition throughout the life cycle, including food safety, corrective dietary modifications, and the influence of specific nutrients on diseases.

Of the total points offered, 645 and above is an A; and 572 above is a B; and 500 above is a C; and above 428 is a D; less than 428 is an F. All exams and assignments must be taken on the day and time assigned by the instructor. Makeup of a test is allowed for any documented emergency. Other makeup tests will be allowed at the discretion of the instructor. All make-up exams consist entirely of essay questions; it is to the student’s benefit to take the exam given in class.

 

ASSIGNMENT DESCRIPTIONS____________________________________________________   

  • Lecture Exams: There will be a total of four lecture exams. Each exam will contain a number (50-70) of multiple-choice questions. Multiple choice questions need to be answered on the answer sheet. Each exam will also have multiple-choice, fill in the blanks, labeling, definitions and/or short essay. Each lecture exam is worth 100 points. The final exam is cumulative in nature. If you miss a lecture exam during the course, the make-up exam may be of a different format and must be scheduled within 2 days of your return to class. Lecture exams may only be made up for district policy “excused” absences.
  • Diet Analysis Activity: The diet analysis activity allows you to evaluate your own diet and exercise regiment. You will compare your personal nutrient intake to Dietary Reference Intakes (DRI’s). This activity is composed of three parts and will be explained in detail the first week of class. This activity is worth 50 points. Late food lists and reports will only be accepted up to two days late with a minimum deduction of 10 points off. Late questionnaires will not be accepted.
  • Group Project/Presentation:       There will be a group presentation during the course. This will be explained in detail the first week of class and will be worth 100 points of your total grade. NO LATE PRESENTATIONS will be accepted.

ATTENDANCE POLICY

Regular and punctual attendance is expected of all students in all classes for which they have registered. All absences are considered to be unauthorized unless the student is absent due to illness or emergencies as determined by the instructor. It is the student responsibility to provide documentation as to the emergency for approval and judgment by the faculty member. Approved college sponsored activities are the only absences for which a student should not be held liable and only when provided by a college official ahead of the absence. Valid reasons for absence, however, do not relieve the student of the responsibility for making up required work. Students will not be allowed to make up an examination missed due to absence unless they have reasons acceptable to the instructor. A student who is compelled to be absent when a test is given should petition the instructor, in advance if possible, for permission to postpone the exam. Student will be dropped from a class by the Registrar upon recommendation of the instructor who feels the student has been justifiably absent or tardy a sufficient number of times to preclude meeting the course’s objectives.   Persistent, unjustified absences from classes or laboratories will be considered sufficient cause for College officials to drop a student from the rolls of the College.
